While EBV spreads primarily via saliva, it establishes latency (dormancy or inactivity) in B cells of the immune system. So, EBV can infect both salivary glands and B-cells.
A variety of factors can reactivate EBV, i.e., making it alive again from its latency, which includes stress, hormonal imbalance, and toxins (including mold).
And yes, some people are more susceptible to EBV's damage and genetics play a major role in this, as far as I understand.
